This gorgeous fruit-topped pie deserves an Instagram account of its own. If you’re a Food52 devotee, you may have seen Erin McDowell recipes before. She’s the foodie website’s most popular baking contributor and she has a reputation for her pies, in particular. This one, from McDowell’s new cookbook, “The Fearless Baker” (Houghton Mifflin Harcourt, $30), is ridiculously easy. The crust is made from crushed sugar cookies and melted butter. The filling is a mascarpone and whipped cream cloud. And the seasonal fruit can be changed up to suit your preferences — a monochromatic glory of red berries, perhaps, or colorful autumnal pears, grapes and figs. Us?
